A Summertime Smoothie for Diabetics and CKD Patients

When the weather heats up, cool down with this Very Berry Tofu Smoothie. It only takes a few minutes to whip up in the blender, will please any crowd and follows dietary guidelines for diabetics and CKD patients. To summer fun and good health!

Very Berry Tofu Smoothie

Serves 4 (1 Cup per Serving)

Ingredients:
1 lb fresh strawberries, cleaned and hulled
2 cups blueberries
9 oz tofu, silken, extra firm
1/2 teaspoon ground ginger
2 pinches of red pepper flakes
1/4 teaspoon rum extract
1 tablespoon honey
1 teaspoon lemon juice
1/2 cup ice

Directions:
Blend all together and serve.
