Sodium chloride, better known as salt, is a vital nutrient for the human body. But you can have too much of a good thing.
Experts suggest a daily intake of 2,400 milligrams of sodium, about a teaspoon of salt, but Americans are eating 50 percent more than they need. A salty diet can lead to high blood pressure, which is a common cause of kidney disease.
One study actually shows that reducing salt consumption by only half a teaspoon could “prevent as many as 92,000 deaths nationwide each year. There would be fewer than 120,000 new cases of heart disease.”* But most of the salt isn’t coming out of your shaker. Over 90 percent of it is in processed foods (like frozen dinners and canned items) or restaurant meals.
The NKF has teamed up with 45 health organizations to raise awareness on how to moderate salt intake. Eating fresh foods, reading and understanding food labels, and choosing sodium-free products are just a few of the things people can do to get started on a better diet. Back to school is here—a great time to celebrate for all the frazzled parents out there who’ve assumed the role of “entertainment central” all summer. Pizza is a family-friendly meal that can be healthy, too! This salt-free pizza recipe is easy and fun to make. It’s a great activity to do with the kids before they hit the books. Enjoy!
|Dough||6 oz mozzarella cheese, shredded|
|1/2 package (1 1/4 teaspoon) dry yeast||1/4 teaspoon garlic powder|
|1 cup warm water||1/2 teaspoon oregano|
|1 tablespoon oil||1 tablespoon sugar|
|1 tablespoon sugar||1 tablespoon oil|
|2 cups flour||1/4 cup chopped onion|
|Sauce||1/4 cup chopped green pepper|
|3 oz. no-salt tomato paste||1/2 lb cooked ground beef, well drained|
|1/2 cup water|
Dissolve yeast in warm water. Stir in 1 tablespoon oil, 1 tablespoon sugar and enough flour to make soft dough. Stir 20 strokes. Place in a greased bowl, turn to moisten all surfaces, cover and let it set in warm area.
Combine tomato paste, 1/2 cup water, garlic powder, oregano, 1 tablespoon sugar and 1 tablespoon oil in a small saucepan. Simmer 5 minutes.
Grease a 17x 14-inch baking sheet. Press dough over sheet to edges. Cover with sauce. Top with onion, green pepper, beef and cheese. Bake at 400°F for 20 to 30 minutes until dough and cheese are golden brown. Cut into 12 pieces.
