Garden Salad

Appropriate for CKD, Diabetes

Serves 4

Ingredients:

1 ½ cups Romaine lettuce
2 cups iceberg lettuce
½ small tomato – diced
4 baby carrots – shredded
½ cucumber – sliced
½ red onion – diced
1 stalk celery (~5 inches long)

Directions:

Toss all vegetables together in a large bowl. For the dressing, mix vinegar and oil or pull out your favorite low sodium salad version. Enjoy!
