Salmon
3 salmon fillets (3 oz. each)
¼ cup fresh lemon juice
¼ cup butter (Smart Balance or other Omega–3 healthy spread)
Salt and Pepper to taste
4 thinly sliced lemons for garnish
Lemon Sauce
1 ½ cup fat free half and half
¼ cup fresh lemon juice
¼ cup butter
¼ cup flour
1 tablespoon cooking sherry
1 tablespoon sugar
¼ teaspoon salt
¼ teaspoon pepper
½ cup sliced almonds for garnish on salmon fillets
Salmon:
In a large skillet melt butter or Omega–3 healthy spread. Once skillet is medium hot, place salmon fillets on skillet and salt and pepper to taste. Pour the lemon juice onto salmon fillets and cook until done and flaky. Keep warm.
Lemon Sauce:
In a small to medium sauce pan melt butter under medium heat. Once butter is melted and bubbling add flour to make a flour mixture (often called a roux). Slowly add the half and half, constantly stirring until it reaches a slightly thick sauce. Add sherry, lemon juice and sugar.
Place salmon fillets on individual serving plate and pour ¼ cup of lemon sauce on top of fillet. Garnish with sliced almonds and lemon slices on each plate.
