Turkey Bacon, Egg and Cheese Deviled Eggs

Appropriate for CKD, Dialysis, Diabetes

Serves 6; 1 deviled egg per serving


½ dozen eggs
3 Tablespoons light mayo
1 tablespoon mustard
1/8 teaspoon black pepper
2 pieces turkey bacon
1 Tablespoon cheddar cheese, 2% cheese

Optional garnish: green onion



Hard boil eggs.
To hard boil egg, place eggs in a saucepan in a single lay. Add water to cover eggs. Cover pot. Bring water to a rolling boil. Immediately turn off water. Let eggs sit in water for 15 minutes. Drain water. Place eggs in ice water. Set aside and let cool.

Crack and peel eggs. Halve eggs lengthwise and remove yolks. Reserve 1 yolk. Combine cooked egg yolk, mayonnaise, mustard, cheese, one piece of turkey bacon, and pepper. Garnish with remainder of bacon, cheese, and green onion.
