Appropriate for CKD
This recipe is for CKD patients who don't have to limit their potassium
2 cups apple cider or unfiltered apple juice
¼ teaspoon almond extract
2 large sweet potatoes, each cut into 8 wedges
Vegetable oil, spray
Simmer apple cider in saucepan over medium heat 45 minutes to 1 hour, or until reduced to a thick syrupy (about ¼ cups). Add almond extract and let cool to room temperature.
Preheat oven to 350°F. Spray sweet potato wedges with oil and place on a baking sheet. Bake 45 minutes, or until tender and beginning to brown. Transfer to platter, and dip wedges into apple cider reduction or drizzle the reduction over the wedges.
