Arepas de Ensalada de Pollo y Garbanzo con Mayonesa Vegana hecha en casa

Ingredientes
- 2 tazas de harina de maíz blanco o amarillo pre cocido
- 2 tazas de agua
- 3 oz pechuga de pollo desmenuzada (omitir si quieres que sea 100% basado en plantas)
- 1 lata de garbanzos
- 3 cucharadas de mayonesa vegana (receta abajo)
- 1 cucharadita de pasta de aji Amarillo paste (opcional)
- 1 cucharadita de comino
- ½ taza de cebolla roja
- ¼ taza de perejil picado
- ¼ aquafaba (liquido de cocción de los garbanzos)
- 1 taza de aceite aguacate
- 1 cucharadita de mostaza dijon o mostaza regular
- 1 cucharada de vinagre de vino rojo
- 1 cucharadita de jugo de limón
- - sal
Instrucciones
- Primero preparar la Mayonesa Vegana, En un envase largo de boca ancha, Añadir a un procesador el aquafaba, vinagre, mostaza dijon, sal, y jugo de limón. Luego añadir aceite de aguacate poco a poco y mezclar con un procesador de mano hacia arriba y hacia abajo hasta que se forme la mayonesa cremosa y suave. Guardar en la nevera en un envase cerrado y con la fecha que se hizo. Puede durar hasta 2 semanas.
- Luego haz el Relleno de la arepa: En un procesador añadir la mayonesa vegana, pechuga cocinada, la lata de garbanzos, aji amarillo, comino, y sal procesar hasta que unan los ingredientes. Luego poner mezcla en un plato y añadir la cebolla y el perejil picado.
- Luego preparar las Arepas, En un envase mezclar harina de maíz y la sal. Agregar agua tibia lentamente. Revolver hasta que este combinado en una masa. Dejar reposar 5 minutos. Con las manos mojadas separar la masa en forma redonda y luego darle forma de disco. Luego en un sarten levemente engrasado con mantequilla, cocinar las arepas a fuego mediano 7-8 minutos cada lado hasta que este crujientes y doradas por ambos lados.
- Rellenar cada arepa con esta mezcla y está lista para comer.
Substituciones:
- Puedes utilizar harina de maíz blanca o amarilla pre cocida
- Pasta de ají amarillo es opcional, podrías utilizar cualquier mostaza si deseas
- Si quieres la receta 100% basado en plantas omitir el pollo, rellenar solo con garbanzos, lentejas, tofu, o tempe.

Ingredientes
- ¼ aquafaba (chickpeas cooking/canned liquid)
- 1 cup of avocado oil
- 1 teaspoon of Dijon or regular mustard
- 1 tablespoon red wine vinegar
- 1 teaspoon of lemon juice
- 2 cups precooked cornmeal flour (white corn or yellow corn)
- 2 cups of water (warm)
- 3 oz cooked chicken breast (optional, omit if you want 100% plant based)
- 1 can of chickpeas
- 3 tablespoons of homemade mayonnaise (recipe below)
- 1 teaspoon of yellow pepper or Aji Amarillo Paste (optional)
- 1 teaspoon of cumin
- ½ cup of small chopped red onion
- ¼ cup of chopped parsley
- - salt
Instrucciones
- Start making the vegan mayonnaise. In a in a wide mouthed tall jar, mix aquafaba, red wine vinegar, salt, Dijon mustard and lemon juice. Then using an immersion blender, start mixing on high, adding avocado oil slowly and moving the blender up and down until you get a creamy smooth mayonnaise. Place in a small airtight container, labeled and dated. Refrigerate for up to 2 weeks.
- Then, let’s make the Arepa filling. In a food processor, add the vegan mayonnaise, chicken breast, chickpeas, aji Amarillo paste (optional), cumin and salt, process until everything is mixed together. In a bowl add that mixture and add the chopped red onion and parsley.
- Then, make your arepas. In a bowl combine the corn flour, water, and salt until combined in a uniform soft dough. Let it rest for 5 minutes. Then, divide the dough and form 4 disks. Heat a lightly buttered skillet over medium heat. Cook the until crispy and golden brown for 7-8 minutes on each side.
- Fill each arepa with the chicken/chickpea filling and ready to eat.
Substitutions:
- You could use either precooked cornmeal flour from white or yellow corn.
- Yellow pepper or aji Amarillo paste is optional, you can add Dijon mustard or regular mustard instead.
- Omit chicken if you want it 100% plant based lower in fat, replace with only chickpeas, lentils, tofu or tempeh.
