Simple Summer Fare from the Kidney Kitchen

Summer's here, and it's time to celebrate with outdoor parties and your favorite seasonal foods. Spice up your bash with this delicious and healthy pineapple appetizer. Low in fat and phosphorus, it's the perfect recipe to help kick off your summer

Spiced Pineapple Appetizer

Serves 10
5 Pieces Per Serving

1/4 cup white wine vinegar
3 tablespoons sugar
2 tablespoons lime juice
1/2 teaspoon Dijon mustard
1/4 teaspoon crushed red pepper
1/8 teaspoon garlic powder
1 20-oz can pineapple chunks in juice, drained

Combine vinegar, sugar, lime juice, Dijon mustard, pepper and garlic powder in a saucepan. Bring to a boil. Reduce heat and simmer, uncovered, 3 minutes. Combine vinegar mixture and pineapple in a bowl; mix well. Serve warm with toothpicks.
