The good news? There are plenty of ways to protect your kidney and heart health. In honor of American Heart Month, let's explore how the heart and kidneys work together and what you can do to keep them healthy.

Instrucciones
- Precaliente el horno a 450 F.
- Corta el pimiento por la mitad. Remueve el tallo y las semillas. Coloca boca abajo en una bandeja para hornear. Cocina por 30 minutos.
- Deja enfriar el pimiento. Remueve la piel.
- En un procesador de alimentos, añade todos los ingredientes. Mezcla hasta tener una mezcla homogénea.
- Usa la mezcla como dip o para hacer sandwichitos de mezcla. Para los sandwichitos, añade 1 cucharada de la mezcla a dos rebanadas de pan y corta en 4 triángulos o 4 cuadrados.
Sustitutos
- Si usas habichuelas blancas enlatadas bajas en sodio, omite la sal de la receta.
- Puedes cambiar las habichuelas blancas por garbanzos, si prefieres. Los garbanzos son más bajos en potasio.
- Si quieres la mezcla menos espesa, añade un poco más de agua.
- Si quieres más sabor a queso, puedes añadir más levadura nutricional (añade 1 cucharadita a la vez). Experimenta con otros sabores como el ajo.

- 1 red bell pepper
- 1 cup cooked white beans, unsalted
- 1 tablespoon of nutritional yeast
- 3 tablespoons of olive oil
- 2 tablespoons of water
- ⅛ teaspoon of salt
- - Low-sodium white or whole wheat bread without phosphate additives
Instrucciones
- Preheat the oven to 450 F.
- Cut the pepper in half. Remove the stem and seeds. Place it upside down on a baking tray. Cook for 30 minutes.
- Let the pepper cool. Remove the skin.
- In a food processor, add all the ingredients. Blend until you have a homogeneous mixture.
- Use the mixture as a dip or to make “sandwichitos de mezcla”. For the sandwich, add 1 tablespoon of the mixture to two slices of bread and cut into 4 triangles or 4 squares.
Substitutions:
- If using low-sodium canned white beans, omit salt from the recipe.
- You can substitute white beans with chickpeas if you prefer. Chickpeas are lower in potassium.
- If you want the mixture to be less thick, add a bit more water.
- For a cheesier flavor, you can add more nutritional yeast (add 1 teaspoon at a time). Experiment with other flavors like garlic.

Paella Española de Vegetales

- 2 cucharadas aceite oliva
- ½ cucharadita sal
- ½ cucharadita de pimienta
- 1 taza de pimiento rojo cortado en trozos pequeños
- 1 taza de tomate rayado o salsa de tomate
- 5 dientes de ajo, cortado pequeño
- 1 cucharada de pasta de tomate
- 1 cucharada de pimento dulce o paprika
- ½ cucharadita de hebras de azafrán o en polvo
- 1 taza de arroz blanco de grano pequeño como arroz Arborio o mejor arroz bomba o de Valencia porque absorbe las agua y sabor que el grano largo. Si usas arroz Valencia por cada taza de arroz añadir 2 ¼ caldo o agua. Si usas Arborio por cada 1 taza de arroz necesitas 4 tazas de caldo de vegetales preferiblemente bajo en sal
- 1 taza de guisantes (pueden ser congelados)
- 3 o 4 limones como guarnición
- 6 pedazos de alcachofas marinadas en aceite d oliva y vinagre como guarnición
- 1 pimientos rostizados enlatados cortados en tiras para guarnición
- 1 o 2 hojas de romero
Instrucciones
- En una olla separada, caliente el caldo de vegetales.
- Prepare la infusión de azafrán con 2 cucharadas de caldo de vegetales caliente y déjelo reposar por al menos 10 minutos antes de añadirlo a la paella.
- Caliente la Paellera a fuego medio-alto y añade aceite de oliva. Luego añade los trozos de pimiento rojo picados y Cocinar por 1-2 minutos. Luego añade pasta de tomate, pimentón o paprika, y ajo (evitar que se queme). Luego añadir tomate rayado o salsa de tomate y poner la sal y la pimienta. Luego añadir el caldo de vegetales caliente y ponerle la infusión de azafrán hecha previamente. Anadir el arroz y luego no moverlo más hasta que esté listo. Añade el romero fresco para que se cocine con el arroz. Hervir a fuego alto por 5 minutos, luego bajar temperatura, tapar por 5 minutos y luego cocinar destapado hasta que se cocine el arroz por 18-20 minutos dependiendo del tipo de arroz que uses.
- Cuando el arroz esté listo, hacer el socarrat que es la parte crujiente y tostada del fondo del sartén. Subir la temperatura a fuego mediano-alto por 1-2 minutos.
- Luego remover del fuego y dejar reposar por 10 minutos.
- Añade guarniciones: alcachofas, pimientos rostizados y limón.
Substituciones
- Si no tienes azafrán, usar 2 cucharaditas de turmeric para darle color a la paella.
- Si usted no tiene una paellera puede utilizar un sartén plano.
- Si no encuentras arroz Valencia/Bomba or Arborio, puedes utilizar otro arroz de grano corto, or medio como arroz Calrose. Importante tiempos de cocción son diferentes dependiendo del tipo de arroz que utilices.

Vegetable Spanish Paella

- 2 tablespoon olive oil
- ½ teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
- 1 cup red bell pepper, small diced
- 1 cup fresh tomato grated or canned (no salt added)
- 5 cloves garlic, minced
- 1 tablespoon tomato paste
- 1 tablespoon sweet paprika
- ½ teaspoon saffron threads
- 1 cup short-grain white, I used Arborio rice or Bomba or Valencia rice because absorb 3 times more water and flavor than long grain rice. If using Valencia short grain rice for each 1 cup you will need 2 ¼ of vegetable stock and for Arborio rice for each 1 cup use 4 cups vegetable stock (preferably use low sodium vegetable stock)
- 1 cup frozen peas
- 3 or 4 lemon wedges for garnish
- 6 canned artichokes hearts marinated in olive oil and vinegar for garnish
- 1 canned roasted red bell pepper thinly sliced for garnish
- 1 rosemary to cook the rice and 1 for garnish
Instrucciones
- Heat vegetable stock in a separate pan
- Infuse saffron with couple tablespoons of hot vegetable stock for at least 10 minutes prior to adding to the paella.
- Heat the oil in a large skillet or paella pan over medium-high heat. Then, add bell pepper and cook for 1-2 minutes, add tomato paste, paprika, and garlic (avoid burning garlic). Then add the grated tomatoes and stir everything together and add 1/2 teaspoon kosher salt and pepper. Slowly pour the hot broth, making sure it's covered by stock and add saffron infusion and stir for 1 minute. Then, add the rice and Don't stir after incorporating to avoid releasing more starch. At this point add the fresh rosemary. Bring to a boil for 5 minutes, then reduce heat to medium-low. Cook covered for 5 minutes then uncovered for another 18-20 minutes.
- You want a crispy layer of rice to form on the bottom of the pan. This is called the socarrat. Once the rice is done, increase the temperature to medium-high heat for 2 minutes to create the socarrat.
- Remove the paella from the heat and let it rest for 10 minutes.
- Garnish with marinated artichokes, red bell peppers, lemon wedges and a fresh rosemary.

- if you don’t have saffron, use 2 teaspoon turmeric
- if you don’t have the paella pan, you can use any large round wide skillet or pan with a flat bottom
- if you don’t find a short white rice like Valencia/Bomba rice or Arborio rice, you could use a medium-grain rice like Calrose rice, cooking time will vary depending on which rice you are using. Read the cooking instructions in the rice label

In 1995, Lisa Myers noticed a mysterious swelling in her feet and ankles. Little did she know that this symptom would mark the beginning of a challenging journey–one that led to a kidney disease diagnosis, ten years on dialysis, and two failed kidney transplants.
Despite these difficulties, Lisa kept fighting and now encourages others to do the same.
