Camp ChiMer was started in 1986 by Dr. Brad Warady, dedicated volunteers, and health care professionals, all of whom shared a common goal to create an opportunity for children with end stage renal disease to participate in a camp experience and develop peer relationships, regardless of their medical needs.

Croquetas de Setas

La croqueta es una deliciosa fritura empanada, típica de la cocina española, que se sirve comúnmente como aperitivo y suele estar rellena de jamón o bacalao. Esta versión vegana presenta un giro saludable al utilizar setas en vez de proteína animal, aceite en lugar de mantequilla, leche de avena en vez de leche de vaca y harina integral para mejorar su valor nutricional sin perder su exquisito sabor. Además, se ha cocinado en una freidora de aire para reducir la cantidad de grasa añadida.

Ingredientes

  • 3 cucharadas aceite vegetal (dividido)
  • 2 tazas setas crudas, cortada en cubitos pequeños
  • 1 diente de ajo, molido
  • cucharadita sal
  • cucharadita pimienta negra
  • taza harina integral
  • 1 taza leche de avena sin azúcar ni aditivos de fósforo, caliente
  • ¼ cucharadita nuez moscada, molida
  • ½ taza pan rallado japonés, Panko
  • 1 cucharadita perejil seco

  1. Precaliente una sartén mediana en la estufa a fuego medio.
  2. Añada 1 cucharada de aceite, las setas, la sal y la pimienta. Sofría por 5 minutos.
  3. Añada el ajo y cocine 1 minuto adicional. Baje la temperatura a fuego bajo.
  4. Añada el resto del aceite y la harina. Cocine la harina por 1-2 minutos.
  5. Añada la leche caliente y la nuez moscada. No deje de mover la mezcla. Cocine 2-4 minutos hasta que espese.
  6. Transfiera la mezcla a un envase que tenga tapa. Deje enfriar entre 20-30 minutos. Luego, tape el envase y coloque en el congelador por 1 hora.
  7. Remueva del congelador. Con un cuchillo, divida la mezcla en 6 partes iguales.  
  8. En un envase pequeño, añada el pan rallado con el perfil seco. Mezcle.
  9. Precaliente la freidora de aire a 350 F.
  10. Saque cada parte igual de la mezcla y forme un cilindro con las manos. También, puede usar 2 cucharas para hacer la croqueta.
  11. Pasa la croqueta por el pan rallado con el perejil. Coloca en la bandeja de la freidora de aire. Continue haciendo las croquetas. Si no las va a comer en el momento, las puede guardar en el congelador.
  12. Cocine las croquetas por 10 minutos. Voltee y cocine por 10 minutos más.
  13. Deje enfriar las croquetas por 4-5 minutos. Sirva y coma caliente.

 

Sustitutos

- Si no tienes harina integral, puedes usar harina todo uso.

- Puedes sustituir el pan rallado por galleta molida.

- Puedes sustituir la leche de avena por cualquier otro sustituto de leche. Si usa leche de soya, la croqueta tendrá un poco más de proteína.

- Si necesitas hacerla sin gluten, sustituye la harina por harina sin gluten y el pan rallado por hojuelas de avena cruda molida.

Mushroom Croquettes

Croquettes are a delicious breaded fried dish, typical of Spanish cuisine, commonly served as an appetizer and usually filled with ham or cod. This vegan version offers a healthy twist by using mushrooms instead of animal protein, oil instead of butter, oat milk instead of cow's milk, and whole wheat flour to enhance its nutritional value without sacrificing its exquisite flavor. Additionally, it has been cooked in an air fryer to reduce the amount of added fat.

  • 3 tablespoons vegetable oil (divided)
  • 2 cups raw mushrooms, diced
  • 1 garlic clove, minced
  • teaspoon salt
  • teaspoon black pepper
  • cup whole wheat flour
  • 1 cup unsweetened oat milk without phosphorus additives, warm
  • ¼ teaspoon ground nutmeg
  • ½ cup Japanese breadcrumbs, Panko
  • 1 teaspoon dried parsley

  1. Preheat a medium skillet on the stove over medium heat.
  2. Add 1 tablespoon of oil, mushrooms, salt, and pepper. Sauté for 5 minutes.
  3. Add garlic and cook an additional minute. Reduce the temperature to low heat.
  4. Add the remaining oil and flour. Cook the flour for 1-2 minutes.
  5. Add the warm milk and nutmeg. Keep stirring the mixture. Cook for 2-4 minutes until thickened.
  6. Transfer the mixture to a container with a lid. Let it cool for 20-30 minutes. Then, cover the container and place it in the freezer for 1 hour.
  7. Remove from the freezer. With a knife, divide the mixture into 6 equal parts.
  8. In a small container, add breadcrumbs with dried parsley. Mix.
  9. Preheat the air fryer to 350°F.
  10. Take each equal part of the mixture and form a cylinder shape with your hands. You can also use 2 spoons to shape the croquette.
  11. Roll the croquette in the breadcrumb mixture with parsley. Place it on the air fryer tray. Continue making the croquettes. If not eating immediately, you can store them in the freezer.
  12. Cook the croquettes for 10 minutes. Flip and cook for an additional 10 minutes.
  13. Let the croquettes cool for 4-5 minutes. Serve and enjoy hot.

 

Substitutes:

- If you don't have whole wheat flour, you can use all-purpose flour.

- You can substitute breadcrumbs for crushed crackers.

- You can substitute oat milk for any other milk substitute. If using soy milk, the croquette will have a slightly higher protein content.

- If you need to make it gluten-free, substitute flour for gluten-free flour and breadcrumbs for ground uncooked oats.
