Chili Rice with Beef

This beef and rice dish is low in sugar and provides moderate phosphorus. Using low-sodium seasoning can make it a better choice for a kidney-friendly diet.

  • 2 tablespoons vegetable oil
  • 1 pound lean ground beef
  • 1 cup onion, chopped
  • 2 cups rice, cooked
  • 1½ teaspoons chili con carne seasoning powder
  • ⅛ teaspoon black pepper
  • ½ teaspoon sage

Directions
Prep: 10 min, Cook: 25 min, Total: 35 min
  1. Heat oil; add beef and onion. Cook, stirring occasionally until browned.
  2. Add rice and seasonings. Mix together.
  3. Remove from heat. Cover and let stand 10-14 minutes.

Tips:

  • May substitute ground beef with ground turkey or chicken. 
  • May add any of the following seasonings: thyme, garlic powder, onion powder, white pepper, red pepper, oregano, or lemon pepper.
  • May substitute 2 cups cooked pasta for rice. Toss pasta in browned beef and seasonings. Remove from heat and serve.
