  • 1½ cups whole wheat pastry flour
  • ¼ cup flaxseed flour
  • ½teaspoon baking soda
  • 1½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 tablespoon cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon cloves
  • ¼ teaspoon ground cayenne pepper
  • 2 eggs
  • ½ cup brown sugar
  • ¼ cup honey
  • ½ cup unsweetened applesauce
  • ¼ cup olive oil
  • ¾ teaspoon almond extract
  • 1 tablespoon grated lemon zest
  • 2 cups shredded carrots, about 4 carrots
  • ⅔ cup raisins

Directions

  1. Heat oven to 375°F.
  2. Lightly grease a 9 x 5 inch loaf pan.
  3. In a large bowl, sift together the whole wheat pastry flour, flaxseed flour, baking soda, baking powder, salt, cinnamon, nutmeg, cloves, and cayenne pepper.
  4. Whisk the dry ingredients until combined.
  5. In a separate bowl, mix together the eggs, brown sugar, honey, applesauce, olive oil, and almond extract.
  6. Stir the lemon zest, shredded carrots, and raisins into the wet mixture.
  7. Add the wet ingredients to the dry ingredients. Stir until just combined. Do not overmix.
  8. Pour the batter into the prepared loaf pan.
  9. Bake for 45 to 60 minutes, or until a tester inserted into the center comes out clean.
  10. Cool before slicing.
  11. Cut into 18 slices, about 1/2 inch thick.
