- 1 tablespoon grated lemon zest
- 2 cups shredded carrots, about 4 carrots

- Heat oven to 375°F.
- Lightly grease a 9 x 5 inch loaf pan.
- In a large bowl, sift together the whole wheat pastry flour, flaxseed flour, baking soda, baking powder, salt, cinnamon, nutmeg, cloves, and cayenne pepper.
- Whisk the dry ingredients until combined.
- In a separate bowl, mix together the eggs, brown sugar, honey, applesauce, olive oil, and almond extract.
- Stir the lemon zest, shredded carrots, and raisins into the wet mixture.
- Add the wet ingredients to the dry ingredients. Stir until just combined. Do not overmix.
- Pour the batter into the prepared loaf pan.
- Bake for 45 to 60 minutes, or until a tester inserted into the center comes out clean.
- Cool before slicing.
- Cut into 18 slices, about 1/2 inch thick.
