Spicy Chicken Salad

Ingredients

  • 2 chicken breasts (~12 ounces), cubed
  • 1 jalapeño, seeded and diced
  • ½ red onion, diced
  • ¼ cup cilantro, diced
  • - juice of 1 lime
  • 1 tablespoon mustard
  • 2 tablespoons mayonnaise
  • ½ teaspoon pepper
  • ½ teaspoon garlic powder

  1. Boil chicken. Then, cube.
  2. While chicken is cooking, mix together the remainder of ingredients: mayonnaise, mustard, lime juice, pepper, garlic powder, jalapeño, red onion, and cilantro.
  3. Mix all ingredients together.
  4. Refrigerate for at least 2 hours.
  5. Enjoy!
