Shrimp Scampi

Quick lemon garlic shrimp scampi with low sodium flavor, low in potassium and phosphorus.

  • 1 pound large shrimp, peeled and deveined
  • 5 large garlic cloves, minced
  • 3 tablespoons extra virgin olive oil, divided
  • ½ to 1 teaspoon red pepper flakes, or to taste
  • 4 tablespoons unsalted butter
  • ¼ cup dry white wine, or low sodium broth
  • Juice of ½ lemon
  • Zest of 1 lemon
  • ¼ cup fresh parsley, chopped

Directions
Prep: 15 min, Cook: 5 min, Total: 20 min
  1. Pat the shrimp dry and place them in a mixing bowl. Add half of the minced garlic and 1 tablespoon of olive oil. Toss to coat. Let sit for 15 to 20 minutes.
  2. Heat the remaining olive oil in a large skillet over medium-high heat.
  3. Add the shrimp to the skillet. Cook for 1 to 1½ minutes on each side, or until the shrimp begin to turn pink. Remove the shrimp from the skillet and set aside.
  4. Add the remaining garlic and red pepper flakes to the skillet. Cook briefly until fragrant. Do not let the garlic brown.
  5. Add the white wine and lemon juice. Cook for 1 to 2 minutes, or until the liquid is reduced by about half.
  6. Add the unsalted butter and stir until melted.
  7. Return the shrimp to the skillet and toss to coat in the sauce. Cook for 1 to 2 minutes, or until the shrimp are fully cooked and warmed through.
  8. Turn off the heat. Stir in the lemon zest and parsley. Serve immediately.

Additional Instructions

Serve over zucchini noodles for a lower-carbohydrate option. If serving over pasta, choose the portion that fits your meal plan. Using low sodium broth instead of wine may change the sodium amount depending on the brand. Choose unsalted or the lowest sodium option available.
