Mexican food can absolutely be incorporated into a kidney-friendly diet, even if you have CKD and need to limit sodium, potassium and phosphorus. Chicken quesadillas, soft shrimp tacos, beef enchiladas and huevos rancheros are just a few examples of entrees that can be excellent sources of protein and other important nutrients if prepared appropriately. It is important to keep in mind that many Mexican dishes often contain hidden sources of sodium, potassium and phosphorus. Some ingredients to limit or avoid include beans, avocados, corn tortillas, tomato based salsas and hard cheeses. On the topic of cheese, most dietitians will agree that 1-2 ounces of cheese can be included in a low phosphorus diet 1-2 times a week, as long as your phosphorus levels are normal; however, you should check with your dietitian to confirm. Some soft cheeses, such as cream cheese, ricotta and brie, are considered lower in phosphorus. A great way to add flavor to your dishes is to include kidney friendly seasonings like cilantro, cumin, garlic powder, cayenne pepper, chili powder, lemon juice and onion powder.
