- 4 cups broccoli, chopped into bite size pieces
- ½ cup fresh blueberries
- ¼ cup dried cranberries
- ¼ cup sliced almonds
- ¼ cup chopped red onion
- 1 cup mandarin oranges, fresh or canned
- 1 cup fresh blueberries
- ½ cup olive oil
- ⅓ cup balsamic vinegar
- 2 tablespoons Dijon mustard
- 2 tablespoons maple syrup

Salad
- Combine all salad ingredients, except the mandarins, in a large bowl.
- Blend all dressing ingredients until smooth.
- Pour the desired amount of vinaigrette over the salad and toss to coat.
- Add mandarin oranges to the salad.
- Serve chilled or at room temperature.
Blueberry Balsamic Vinaigrette
- Add the blueberries, olive oil, balsamic vinegar, Dijon mustard, and maple syrup to a blender or food processor.
- Blend until smooth.
- Taste and adjust as needed. Add a small splash of water if the dressing is too thick.
- Pour the desired amount over the salad and toss to coat.
- Store any leftover vinaigrette in a covered container in the refrigerator. Shake or stir before using.
