  • 4 cups broccoli, chopped into bite size pieces
  • ½ cup fresh blueberries
  • ¼ cup dried cranberries
  • ¼ cup sliced almonds
  • ¼ cup chopped red onion
  • 1 cup mandarin oranges, fresh or canned
Blueberry Balsamic Vinaigrette
  • 1 cup fresh blueberries
  • ½ cup olive oil
  • ⅓ cup balsamic vinegar
  • 2 tablespoons Dijon mustard
  • 2 tablespoons maple syrup

Salad

  1. Combine all salad ingredients, except the mandarins, in a large bowl.
  2. Blend all dressing ingredients until smooth.
  3. Pour the desired amount of vinaigrette over the salad and toss to coat.
  4. Add mandarin oranges to the salad.
  5. Serve chilled or at room temperature.

Blueberry Balsamic Vinaigrette

  1. Add the blueberries, olive oil, balsamic vinegar, Dijon mustard, and maple syrup to a blender or food processor.
  2. Blend until smooth.
  3. Taste and adjust as needed. Add a small splash of water if the dressing is too thick.
  4. Pour the desired amount over the salad and toss to coat.
  5. Store any leftover vinaigrette in a covered container in the refrigerator. Shake or stir before using.
