Apple Bread Loaf

This apple bread loaf is a vegan recipe, low in potassium, and low in added sugar. Grated apple peel and applesauce are used to add flavor and moisture to the bread.   • 1 medium apple with peel, grated (1¼ cups unpacked)
  • 1 cup unsweetened applesauce
  • 3 tablespoons sugar
  • ⅓ cup vegetable oil
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ⅛ teaspoon salt
  • 1 cup whole wheat flour
  • 1 cup ground oats

  1. Preheat the oven to 350 F.
  2. In a large bowl, mix all the ingredients.
  3. Spray an 8.5” x 4.5” rectangular pan with non-stick spray.
  4. Add the mixture to the pan. Bake for 60 minutes or until a toothpick inserted in the center of the bread comes out clean.
  5. Remove the apple bread from the oven and let it cool. Cut into 12 slices of 0.6”.
  6. Store in the refrigerator.

 

Substitutes

- Gala apple was used for this recipe. However, you can use other sweet apple varieties like Honeycrisp and Fuji.

You can substitute sugar with sugar substitute to avoid added sugars.
