Grilled Romaine Salad

Grilled romaine salad with fresh strawberries, blueberries, and a homemade lemon-strawberry vinaigrette. Light, quick, and vegan.

  • 4 head Lettuce, Romaine
  • ¼ cup + 2 tbsp Extra Virgin Olive Oil, divided
  • ¼ cup Lemon Juice, Fresh
  • ¼ tsp Salt, Table
  • 1 tsp Black Pepper, Ground
  • ¼ cup whole pieces Blueberries, Fresh
  • ¾ cup sliced Strawberries, Raw

Directions

To Make Vinaigrette

  1. Combine lemon juice, ½ cup strawberries, salt, and pepper in a food processor.
  2. Pulse until combined.
  3. Stream in ¼ cup olive oil. Set aside.

​To Prepare Salad

  1. Preheat a grill to medium-high.
  2. Rinse and pat dry the lettuce. Cut the heads in thirds lengthwise.
  3. Lightly brush the surface with olive oil and grill about 4 to 5 minutes total.
  4. Place each wedge on a salad plate. Top with remaining strawberries and blueberries.
  5. Drizzle with 2 Tablespoons strawberry vinaigrette.
