Rum Pear Tarts

Ingredients

  • ½ packages 3 oz. vanilla pudding, cook and serve
  • 1 cup rice milk, unfortified
  • teaspoons rum extract
  • 1 pear
  • 1 package, mini phyllo cups (12 count)

  1. Follow microwave directions on how to make the pudding using ½ a package.
  2. Add rum extract and chill.
  3. After chilled thoroughly, spoon 1 heaping teaspoon of pudding into each phyllo cup.
  4. Peel and slice pear, place ½ slice on each cup and serve immediately.
