Golden Turnip Latkes with Zesty Red Pepper Relish

Crispy baked plant-based latkes made from turnips and onions. Oil-free, low in potassium, and full of flavor.

  • 2 large turnips, peeled and grated
  • 1 medium onion, grated
  • 2 flax eggs (2 tablespoons ground flaxseed mixed with 6 tablespoons water, set for 5 minutes)
  • 3 tbsp flour
  • 1 tsp ground coriander
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • ½ tsp black pepper (optional)

  1. Grate the turnips and onion, then squeeze out as much moisture as possible with a clean towel.
  2. In a large bowl, combine grated turnips, grated onion, flax eggs, flour, coriander, onion powder, garlic powder, and black pepper. Mix well to combine.
  3. Preheat oven to 425°F. Line a baking sheet with parchment paper.
  4. Spoon the mixture onto the baking sheet in small mounds and flatten slightly into latke shapes.
  5. Bake for 15 minutes, then carefully flip each latke and bake an additional 15 minutes until golden and crispy on the edges.
  6. Remove from oven and serve warm.
