- ½ packages 3 oz. vanilla pudding, cook and serve
- 1 cup rice milk, unfortified
- 1½ teaspoons rum extract
- 1 pear
- 1 package, mini phyllo cups (12 count)

- Follow microwave directions on how to make the pudding using ½ a package.
- Add rum extract and chill.
- After chilled thoroughly, spoon 1 heaping teaspoon of pudding into each phyllo cup.
- Peel and slice pear, place ½ slice on each cup and serve immediately.
